Breakfast bars for when on the run

Morning!!

Thought might be something to try on a rainy, WINDY day and just before school starts!! The majority of the recipes I try and 'play around with' will always be quick and easy!! This is the reality for working parents with a number of kids... plus you dont want/need to spend your whole day just cooking!!!

These bars are awesome to grab on your way out the door, also great for the kids lunch boxes as apparently schools are only concerned with the use of peanuts in lunches (please correct me if im wrong!).....

I got this recipe ages ago from a site www.Elanaspantry.com.... excellent source of 'paleo' recipes!

Breakfast Bars

1 ¼ cup almond meal
¼ teaspoon celtic sea salt (or I use himalayan pink rock salt)
¼ teaspoon baking soda
¼ cup grapeseed oil
¼ cup honey (you can use agave nectar but Im not convinved on it 'goodness' yet)
1 teaspoon vanilla extract
½ cup unsweetened shredded coconut
½ cup pumpkin seeds
½ cup sunflower seeds
¼ cup blanched slivered almonds
¼ cup raisins (or you could use apricots, cranberries etc)
    • In a small bowl, combine almond flour, salt and baking soda
    • In a large bowl, combine grapeseed oil, honey and vanilla
    • Stir dry ingredients into wet
    • Mix in coconut, pumpkin seeds, sunflower seeds, almond slivers and raisins
    • I must admit I have been crunching or 'blitzing' the seeds and nuts a bit for the kids to make it less obvious.... playing 'hiding the nutrients' game...
    • Grease a 'slice tin' with grapeseed oil or can use baking paper...
    • Press the mix into the tin. It helps to wet your hands
    • Cook for 20 minutes on 180
    • cut into desired sized bars!
