Klaudias symptoms (looking back) - corn


As said in my first blog, it has been around eight weeks since my husband, Klaudia's Doctor and I finally realised that Klaudia could not eat Gluten and Grains (with the exception of rice at this stage).  It was a MUST and not a choice.
So with the recipe and information sharing, I also wanted  to share how we got to this point... just in case there are other people going through the same difficulties and therefore might even help.... as the most significant change to Klaudia has been the amazing improvement to her health!
 
To get to this point though has been a long road… and knowing that there had to be an answer!! I just never guessed that it was going to be ‘food based’….
 
I could honestly write for hours about K’s symptoms and the nightmare that it was. At the time people had suggested I keep a blog, but I couldn’t think straight and my focus was only on trying to get K better. So I thought I would summarise the important stages and changes looking back....
 
First Change - Corn
Once K’s tonsils were removed mid March 2012; my husband and I thought the worst was over. However it was about two weeks later that K’s rashes first appeared. I have spent a lot of time wondering whether this was a coincidence or not…. And have never reached a definitive answer….!!
Initially the rash started from the inside corner of K’s right eye, which was always watering. It then slowly increased to include most of her face. The rash was red but not really dry, however the whites of her eyes were never red. Her eye lids then started to swell and her eyes ooze pus. With every GP, Specialist etc that we saw a 'swab' would be taken of K's eyes, and not once did it show up any type of 'eye infection'.
Whilst on her face, the rash then started to appear under her left arm. Initially it looked like a hive, but then started to increase in size and travelled down her side. K would often complain about it being sore and itchy. K had always suffered from chronic nappy rash. This was always thought to be due to the volume of antibiotics she was consuming and at times teething. I must admit though, even this started to get worse. At one point, despite best efforts from all, her bottom was so bad it had to be treated with a severe ‘burn cream’. 
There were times when things would seem to improve, this would sometimes coincide with a new cream or antibiotic, and then days later it would gradually start to come back again.  This would also include K's on-going fight with throat infections, chest infections, ear infections…. and despite all the Doctors efforts, we were all going mad!!!
After about seven months of living like this and by pure luck, my parents were speaking to one of their good friends, Tania Hubbarb www.glutenfreegrainfree.com.au, who straight away said ‘get her off corn’!! Within moments of this, my mum gave me a call and as nothing else was working… we gave it a go!
Would you believe that by the very next day, there was improvement !!! Within about three days, the rash on her face was completely gone as had the swelling on her eye lids. I have no doubt in my mind that the rash on her face was from ‘Corn’!!! It is important to note though that K had not tested for 'corn allergy' in any of her blood tests.
Unfortunately by just removing corn, this did not cure everything.... K’s illnesses continued, her eyes continued to water and ooze pus (but just not as frequently), the rash under her arm remained but had reduced dramatically in size and her nappy rash continued but was definitely not as horrible.
 
We finally had a start…. and I began to research intolerance's!
