My Story - Cooking 4 K

'Cooking 4 K' is about sharing recipes, ideas, research and information but most importantly support to parents and anyone else who is trying to transition to, and survive in, the world of food intolerances.
Please note I am not an expert on this matter, I am not a chef and I am not here to pass judgment on anything…. I am simply a mother who was forced against a wall and given two choices:
a) continue living the nightmare we were with a daughter who was chronically ill, failing to thrive, in and out of hospital where her symptoms were treated but never the cause ...... and therefore was never getting any conclusive answers from the medical professionals consulted (and there were many!!) or
b) take control of what was happening and look outside 'the box'. Challenge and question everything that was going on and to not stop until either the answer was found, or there was no stone left unturned!!!!

..... So I became the fighter, took control and we haven't looked back.....

My passion now, whilst on this journey to understand K's intolerances and how to 'normalize'  our lives with food, is to also offer support (either during transition to or just day-to-day 'food free from' living) to anyone else on a similar journey.....
My Story

My name is Jess. I am married and am a working mother with two children, Cayden 4 and Klaudia 2.

This blog is based on the battle both my husband Brian and I have just endured with our daughter Klaudia, who from the age of 7months and up until approx. 8 weeks ago, we believed had no immune system. From 7 months, Klaudia had continually suffered from chronic throat infections, ear infections, eye infections, chest infections and a myriad of other illnesses. Klaudia had her tonsils and adenoids removed and grommets inserted as soon as she turned one, but it made no difference. Klaudia’s symptoms continued to get worse and she also started suffering from very painful rashes all over her face, chest and bottom. Her weight would continually fluctuate and we struggled to keep it on her. We consulted ridiculous numbers of GP’s, Holistic Doctors, Nutritionists, Pediatricians, Dermatologists, and Optometrists and subjected Klaudia to a number of tests without any results. Please note this also included various allergy testing.

Klaudia was literally living on antibiotics to the point where they weren’t even helping to fight the symptoms anymore. We tried just about every medicine, cortisone and natural remedy known to man with her condition’s often requiring hospitalization. We were desperate; we really didn’t know where things were headed and began to assume the worst.

As desperate parents, we started talking to anyone and everyone who would listen in the hope that we might be given another idea to try…. And this is how we found our new direction and ultimately the change to get both our daughter, and our own life back under control and looking forward!!!

…… You see Klaudia suffers from a number of food intolerances!!! It is also believed that Klaudia is ‘Celiac’ however does not test ‘positive’ with the blood tests available. We have chosen not to subject her to any other tests.

By completely removing Gluten, all Grains (with the exception of rice at this stage), and most preservatives and colorings from Klaudia’s diet…. Everything has almost cleared up, she hasn’t suffered from any illnesses for almost 6 weeks (touching wood!!) and she has finally reached 10kgs (27/1/13).

….. So now what do we feed her…..

Obviously now most packaged foods, pre-made meals, tins, sauces etc are no longer really an option for us as my husband and I both agreed that if this was the life Klaudia had to live… so did we!! And my goodness do we feel wonderful for it!!! J

Basically though, we are cooking everything from scratch and so this is where the idea of this page has come from!!! I continually need to do research on whether foods, ingredients and recipes will work for K so I thought… why not share them!! I have also had wonderful feedback from family and friends who are subjected to our meals when they visit and as a result, want the recipe!!

Sooooooo please feel free to also share any recipes, research and information too by following my blog and by joining my Facebook page http://www.facebook.com/CookingForK?ref=hl and that way we can all be helping each other!!!

Cheers

Jess
